Brunch: Glazed Fruit Medley (and more)

Mike and I have been looking forward to a low key conference weekend! We typically lounge around all day while watching the sessions, maybe take a nap in between, and enjoy a nice brunch. Here are a few of the dishes I've made in the past.

Glazed Fruit Medley

1/2 cup sugar

1 Tbl cornstarch

1 cup orange juice

3 cups cubed honeydew or cantaloupe

3 medium firm bananas, sliced

2 cups green grapes

2 cups halved fresh strawberries


In a small saucepan, combine the sugar, cornstarch and orange juice until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Transfer to a bowl. Cover and chill for 2 hours. In a large serving bowl, combine the honeydew or cantaloupe, bananas, grapes and strawberries. Drizzle with glaze; gently toss to coat.
