Jenny's Amazing Cinnamon Rolls

In anticipation of his visit, I made homemade cinnamon rolls, one of JP's favorites. I had forgotten how easy and delicious these are. If you have a bread machine, pull it out - you're going to love these. They're huge, super soft, and fluffy with just the right amount of gooey-ness, and of course, cream cheese frosting on top.

Dough: (place in bread machine according to manufacturer's directions, select dough cycle)
1 C warm milk
1 stick melted margarine (do not use the stuff in the tub)
2 eggs
4 C flour
1/2 C sugar
1 tsp salt
2 1/2 tsp yeast

When cycle is complete, roll out dough on a lightly floured surface. Roll into a large rectangle, about 18-21" long and 12-16" wide, and 1/4" thick. Mix together filling ingredients and spread over dough, to within 1/2" of edges. Filling: 1/2 stick melted margarine, 1/2 C brown sugar and 2 tsp cinnamon. Roll up lengthwise and pinch off into 12 rolls. Place cut side down in a greased 9x13 pyrex. Cover and let rise until double. Cover with foil and bake at 350* 15 minutes, remove foil and bake 5 minutes longer. Cool and frost with cream cheese frosting: beat together 1/2 stick softened margarine, 2 oz softened cream cheese, 1/2 tsp vanilla, dash salt and 1 1/2 C powdered sugar.
