Recipe of the Week: Grandma's Strawberry Pie

I love strawberries and I love summer and this is one of my favorite desserts! It's fast and easy too. Enjoy!

Grandma's Strawberry Pie

1 Qt. fresh strawberries cut ½ lengthwise (4 cups)
3 Tbl cornstarch
¾ cups sugar
¼ cup water
¼ tsp lemon juice


Combine cornstarch with ½ cup of the sugar and ¼ cup water. Add 2 cups strawberries and cook, stirring constantly until thick and clear. (Be sure to cook it long enough and until it's very thickened, so the pie sets up when chilled). Add remaining ¼ cup sugar and stir until dissolved. Stir in lemon juice and remaining strawberries. Pour into 9-inch baked pie shell or purchased graham cracker pie shell. Chill thoroughly. Top with whipped cream when ready to serve.

I had almost forgot this existed! I'll have to make some now. So do you usually make 2 of these at a time? (1 and 3/4 pies for Mike, the rest for everyone else)

Silly Bwutha-

1 and 3/4 pies for ME, and the rest for everyone else. Buy a regular pie crust or graham cracker crust to make it easier. But if you're feeling adventurous, here's a perfect pie crust recipe (makes 2 crusts):

1 ½ cups shortening
3 ½ cups flour
2 teaspoons salt
½ cup ice water (ice cold water makes it flakey.)
Mix flour and salt. Cut in shortening and mix until it is a pea sized mixture. Add ice water a little at a time until dough holds together. Roll out between wax paper.
