1/4 C olive oil
1/4 C lemon juice
3 Tbl chopped fresh parsley
1 Tbl minced garlic
Black pepper to taste
1 1/2 lbs medium peeled, deveined shrimp
Rinse shrimp and pat dry with paper towel. In a non-reactive bowl, stir together first five ingredients, add shrimp and toss to coat. Refrigerate 30 minutes. Preheat grill for high heat. Thread shrimp onto skewers, Discard any remaining marinade. Lightly oil grill grate. Grill for 2-3 minutes per side or until opaque.
